I picked up a slab of Skuna Bay Salmon today that had been smoked by a local meat market. They sold it fresh also, and said that while cutting it up it smelled almost like watermelon. I had never heard of Skuna Bay Salmon so I thought I’d give it a try.

I’m very very glad I did.

Wow, the salmon had amazing flavor and buttery texture. I’m going to pick up some fresh Skuna Bay Salmon next time I stop by there.

Here are a few things I learned about Skuna Bay Salmon:

The fish farm is located on Vancouver Island in the Nootka Sound of British Columbia. The salmon is wild salmon with the hatchery located on the banks of Vancouver Island.

The Skuna Bay Salmon are harvested after 3 or 4 years at a weight of around 10 pounds and packaged by 1 of only 6 people before making its way directly to the chef with no intervention. They currently are only selling whole fish.
