If you have ever prepared a Turducken, you know exactly how much work and care goes into it. This feast called Turducken has been gaining more and more popularity lately. It seems though that most people would rather purchase a pre-prepared and packaged Turducken. Well that’s just no good.

I have often heard the term "Soul Food" used to describe a certain type of cuisine. When I hear it, I immediately think of dishes such as fried chicken, braised greens, catfish, barbeque, and pork. I set out to answer a question. What does fried chicken have to do with my soul?

Ok, it doesn’t get much more simple than this. However, It is a noteworthy concept. The concept of Mirepoix. Imagine, 3 simple vegetables that rarely get eaten on their own, when combined and cooked in a certain way are able to add such an incredible and complex flavor to a dish. This is called the Holy Trinity or Mirepoix.

Mirepoix

  • 2 parts Onion
  • 1 part Celery
  • 1 part Carrot

Chop it up however you like just do it uniformly, if the ingredients will be visibly distinguishable when served however, you will want to make it look nicely diced.


Variations:Chinese Mirepoix

  • 2 parts Scallion
  • 1 part ginger
  • 1 part garlic
